Hash Brown Breakfast Skillet

  1. Cook hash browns according to package.
  2. Chop green peppers, red peppers and onion.
  3. Saute veggies in olive oil in a frying pan along with cooked, crumbled bacon and 1/2 tsp garlic.
  4. Add hash browns to skillet; layer with veggie mixture, 1 cup cheddar cheese.
  5. Crack four eggs on skillet; break yolks.
  6. Cook in a 400 degree oven until cheese is melted and eggs are cooked.
